Description

LUX WINES
LUX: LIGHT, BRILLIANCY, LIFE

“The Benedictine monks, thirsting for the Light which deifies, and the Provençal wine growers basked since their childhood in the beams of a dazzling sun, we would like to take you to the summit, to share with you the joy of the moment when the light, unveiling itself, almost blinds us and reveals the secret of a more excellent way.”

The thousand and one skills of Ars Vinitoris (the art of wine making), the unique character of our terraced vineyards in Le Barroux and Upper Beaumont, the search for the woods capable of subtly enhancing our best grapes… and above all, the love with which monks, nuns and wine growers work in harmony: this is the path which we have followed to lead you to where the blinding light finally enlightens: the true Light is Charity.

Lux White 2020
PATIENCE IN AZURE

Rich and delicate scents merging white flowers and candied exotic fruit. A salty minerality runs through the complex material with notes of roasted almonds. Its depth is the memory of the days when the patient roots worked through the earthen clay soil.

The Vineyard

The South parcel of land in the enclosed grounds of the Sisters of Annunciation convent, whose soil is a mixture of clay and limestone, planted with Clairette vines, brings a powerful aromatic beauty to this wine. The terroir Saint Vincent, located at the bottom of the monks’ hill, with a sandy and lime soil, is planted with young Clairette for the fresh and acidic qualities. The Saint Thérèse parcel of land, with clay and sand combination, allows the Roussanne to bring the wine its unique aroma and powerful structure. On the foothills of Le Ventoux, a few more Clairette from selected growers fill their grapes with the generous sun and rich clay soil. Finally, the Roussanne of Beaumont de Ventoux, growing under the protection of the chapel Saint Sepulcre, with their very high density and clayish limestone bring the magnificent final touch to this wine.

Viticultural Work

Above all else, Via Caritatis’ conscientious growing approach is guided by a commitment to the maintenance and service of God’s Creation. Our philosophy is to let nature, through our vines as well as our other products in Provence, produce its fruits in its own timing, today and tomorrow. This is made possible by the perfect microclimate and famous Mistral that help keep the air clean and healthy. The yields are closely monitored according to the different terroirs, vine types, graft carrier, age and density of the plants.

Vinification and Production

The harvesting is done primarily by hand followed by a very strict sorting in order to keep only the grapes that are perfectly healthy and ripe. The grapes are then gently brought to the cellar in order to avoid unsupervised crushing in small containers. The cold pressing is done directly into a must with the seeds, stems, and skins. The vinification is done in stainless steel tanks under controlled temperatures. The fermentation takes place slowly in order to extract the specific aromas of these varieties. Once the fermentation is done, the different wines are mixed together and put up on lees for a period of 6 months. A portion of the Roussanne is fermented and put up on lees using the batonnage style stirring process in French oak barrels for 6 months as well, then added to the others right before the bottling. The assembling of the tank-aged and barrel-aged wines is done shortly before the bottling.
